Meyer Lemon Pie

Ingredients 1 ¼ cups white sugar 3 large eggs 3 ¾ fluid ounces Meyer lemon juice ¼ cup butter, melted 1 (9 inch) pastry shell, unbaked

Directions assemble all of the ingredients. Turn the oven on to 350 degrees Fahrenheit (175 degrees Celsius).

In a blender, combine the sugar, eggs, and lemon juice; process for three minutes, or until smooth.

Add melted butter to the blender and process for an additional thirty seconds. Pour the lemon filling into the pastry case.

Bake for 30 to 35 minutes, or until the filling is barely set, in a preheated oven. Before serving, let the pie rest for another fifteen minutes or more until it is totally set.
