Lemon Cheesecake Bars

Ingredients: – 1 1/2 cups graham cracker crumb – 1/4 cup sugar – 1/2 cup unsalted butter, melted – 16 oz cream cheese, softened – 2/3 cup sugar

– 2 large egg – 1/3 cup fresh lemon juice – Zest of 1 lemon – 1 tsp vanilla extract – Powdered sugar for dusting (optional)

Instructions: 1. Preheat your oven to 350°F (175°C). Grease or line a 9x9 inch baking pan with parchment paper, leaving some overhang for easy removal.

In a mixing bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until well combined. Press the mixture evenly into the bottom of the prepared pan to form the crust.

In another bowl, beat the cream cheese and 2/3 cup sugar until smooth and creamy. Add the eggs, one at a time, beating well after each addition.

1. Mix in the lemon juice, lemon zest, and vanilla extract until fully incorporated and smooth. 2. Pour the cream cheese mixture over the crust in the pan, spreading it out evenly.

Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center is slightly jiggly.

Remove from the oven and let it cool completely at room temperature. Then refrigerate for at least 2 hours, or until chilled and set.

1. Once chilled, use the parchment paper overhang to lift the cheesecake bars out of the pan. Cut into squares or bars. 2. If desired, dust the tops with powdered sugar before serving.
