Atlantic Beach Pie

FOR THE CRUST: 6 oz. saltine crackers 1/2 c. unsalted butter, softened 1/4 c. granulated sugar

FOR THE FILLING: 14 oz. sweetened condensed milk 4 large egg yolks 1/4 c. lemon juice 1/4 c. lime juice

Directions: Preheat oven to 350°. To make the crust, coarsely smash the crackers (2 1/4 cups). Mix broken crackers, butter, and sugar in a medium bowl.

Combine until crumbs hold together when pushed with fingertips. Press the crust mixture into a 9-inch pie pan bottom and sides. Freeze crust for 10 minutes.

Bake the crust for 20–25 minutes on the center rack until golden brown. Allow the crust to cool for 10 minutes.

The filling: Whisk sweetened condensed milk, egg yolks, lemon juice, and lime juice until smooth.

Pour filling into cooked crust. Return the pie to the oven and bake for 15 minutes to firm the filling center. Cool the pie on a wire rack at room temperature for 1 hour, then refrigerate for 2 hours or overnight.

Before serving, garnish the pie with whipped cream and citrus pieces.
